Uno Fujisawa
Uno Fujisawa, born in Japan in 1982 and currently based in Amsterdam, is not only an artist but also a chef. Her artistic endeavors are rooted in a profound exploration of the seemingly simple act of eating, a ritual that is universally repeated every day.
Fujisawa’s interests span a wide range of themes and activities related to the act of eating, encompassing soil, agriculture, food production, daily tools, and consumption systems. Intent on bringing nature, food, design, and art into a whole, researching the ways in which the ordinary may become into the extraordinary.
Having honed her culinary skills as a self-taught chef for over 15 years, Fujisawa further deepened her understanding of agriculture and nature at Landje van de Boer in the Netherlands since 2020. Concurrently, she actively participated in festivals such as the Japanese knotweed festival at Mediamatic in the Netherlands.
Her approach explores new possibilities for food, merging cooking and Japanese traditional culture, particularly Ikebana, into what she terms ‘Edible Ikebana’ as her daily practice and sharing with people.
Her simple practices try to touch profound qualities of life. They wish to reveal the meaning of the inner world of relationships between nature and humans.
